Initial work for Kustomize. Still needs additional touchups, words review, etc

What still needs review:

Readme
double check of all functionality
Updating the bridge without needing to reapply all overlays

looking good so far but will probably wait until the README is fleshed out out a bit before digging further in. No immediate concerns or suggestions re the existing Kustomize manifest, stoked for this!
