Replace AmountOfSubstance with Substance #3

Given both major implementations (JScience and UOMo) use the term "Amount" for 
actual classes I decided to clone this quantity simply calling it "Substance". 
TODO suggests alternative names, please comment here if you have any additional.

The old interface is there, but @deprecated. Should be eliminated from the API 
as soon as possible, ideally 0.5.3
