Licensing #23

We don't have a license on our source code yet. Given that our project started off from the esp32-i2s-slm project which is licensed as GPL v3, I believe we are required to also license as GPL v3 since we are (to some extent) a derivative work.

I would also personally prefer a strong copyleft license to ensure our work is kept open source.

We would need to add a LICENSE file to our repo and add license notices to our source files, which I would be happy to do.
