I noticed AdGuard has implemented systemwide ECH support in their desktop app: https://adguard.com/en/blog/adguard-v2-10-for-mac.html I tested it with my Control D DoH URL and it worked flawlessly.

Please enable this feature in ctrld.

It would be best if it just does what dnscrypt proxy does and include a DoH listener so you can add that to Firefox/Chrome
