Remove achilles references

There are a lot of references to Achilles in both variable naming in the main R script and a separate folder with original Achilles sql scripts inst/sql/sql_server/analyses/achilles.

To avoid confusion:

• [x] the Achilles sql folder should be removed
• [x] the variable names renamed. e.g. catalogueExportSql
