Hello. Can I use DAVE to simulate ASV's as well? I'm not seeing any signs of it in the docs.

Hi, DAVE is more meant for underwater simulation and has tools to support manipulation tasks. Though the hydrodynamics it relies on and sensors like DVL, etc., are also commonly used for surface vehicles.

You can look at VRX or MBZIRC simulations, also created by Open Robotics, for surface vehicle environments. They use more or less the same things for hydrodynamics. VRX has recently been ported to ROS 2 Humble and Gazebo Garden.
