I have the same problem. When I adjust the Z-Offset while printing larger or smaller (with the micro-step), the print stops, the stepper makes noise and the nozzle moves into the print and scratches the print bed. I then had to turn off the printer.
Same symptoms here as well. When adjusting z-offset the motors make a lot of noise(even if I dont adjust anything while in the offset page of the touchscreen)...and If I try to move it up or down, the nozzle slams into the bed.

There is the same noise with stock firmware, I think stock firmware swap driver to spreadcycle when adjusting Z-Offset but can be verified because TFT firmware source are not available.
Z-Offset height is managed by the screen, it sends the commands. Latest Flsun screen update change step value to 0.0125.

I swapped the original touchscreen for a BTT TFT70 & the problem is solved. Even the motor noise while adjusting z-offset is resolved by changing the display.
The stock firmware only let you change the Z offset by I believe 0.05mm? I think that was it. Your firmware changed that to what appears to be 0.01mm which is fantastic, but for some reason when I tap to bring the head down another 0.01mm sometimes it'll skip and go 0.02mm. This has been causing me no end of issues with getting my first layer right.
Side note; when I try to change the z offset midprint the motors will make a loud weird noise when in the menu to change it, but I haven't actually changed anything. The noise goes away when I leave the menu. I can show a video with this issue if you'd like, it's easily reproducable.
