No, you can modify the default the pay address (site's address)

yes you can also modify and include notes, as there was an extension for the sidebar feature or paying directly to site's address

im not sure it would be secure protocol to use the same private key for site maintenance as well as a static currency store, particularly if your using a zeroid clone to login or any form of automation( private key would have to sit on the server)

well you can always redirect users, for example editing the donations in the content.json or to make a html prompt of where you want them to send it to you could also build your system in a manner that allow trusted moderators to handle automation task and leave the "automation account"'s keys on the server and your account keys always to yourself
