:sparkles: Add load_extensions_files step #104

The extensions were applied in #101 , but they were not loaded, so there was nothing to apply. This PR implements that missing bit, completing the process of loading extensions.

The paper draft failing was fixed in https://github.com/ImperialCollegeLondon/wsi/pull/103/commits/2e5ca8252bc8199ee7d259a993057a73826d6f0d, so let's merge #103 first, update this one and then merge to avoid conflicts.
