Update to 1.21 #19

Also added a few new offset types and added overlay message as a toggleable option with offset

Compiled jar here

I have changed up the mixins quite a lot so if you would prefer them to be more like how they were before I can revert to using those :)

Workflows will need updating to Java 21, I haven't done those
