Migrate docs to GitHub #58

Core docs from gitbook have been moved to ./docs now but they need reviewing and correcting for MD format.

Docs will stay in hosted by Gitbook as it's easier for users however those docs are now contained into ./docs/ folder and a separate branch. These docs can be modified in MD and when pushed they will take affect in Gitbook.
