Add Prometheus #9

GraphDB has moved towards using Prometheus for log analysis. We should run Prometheus and connect it to GraphDB.

  1. Create a new folder for Prometheus
  2. Add a docker-compose & config file for it
  3. Configure it to connect to the GraphDB container
