Disable translation tests for L2D fork (Not relevant at the moment for L2D)
Minor fixes to fix the failing test-use_python and test-manage_deps tests
Only run CI checks on ubuntu-latest as this is the main os where lessons are built on in CI anyway.
Also because macOS-latest was giving a lot of trouble with the jupytextR dependency. See https://github.com/milanmlft/jupytextR/issues/28
