It would be useful to have a bit more guidance on the purpose of ADMIN_USER and ADMIN_EMAIL at the start. I had to read to almost the end of the script to see how they were used to create the first admin user. Or perhaps just default the user to ADMIN_USER=lpadmin or similar

No longer needed, because we have a setup
