First thing would be to find or design a Hindi font for the MD_MAX72xx library. Then you can use the font in the library to replace the standard font. This has come up before so someone may have already done this, but I have not seen it and it has not been contributed back for general use. Look at the MD_Parola thread on the Arduino forum.
