The builds happen Monday evening, generally concluding around 10pm Eastern. That said, the images are generally just a week old at any given time so it really shouldn’t matter if you’re using the old or new image except for some patching updates to keep launch times low. Occasionally there are larger updates like GPU driver updates, but that’s rare.
