Caz, you can. Under notifications / incoming SMS / In Seperated conversations.
Works for me. Then its all handled like a typical chat. I use Pidgin

Brilliant!! But now it's creating a "chatroom" in pidgin... It's soooo close to
being perfect... is there something I'm missing that can make it just a contact
and not a chatroom?

Solved issue with GoSMS, Under Settings->Receive Settings-> Uncheck the second
option blocking duplicate messages. Downside to this is that I beleive the
android default chat program will receive the messages aswell

Nice find Craig! GTalkSMS does indeed work with GoSMS with that.
I do not get and secondary messages from my default text client since I had
notifications disabled from the default text client when I installed GoSMS.

This is caused by GoSMS: Disable "duplicate message blocking" as described by
craiglennox in http://code.google.com/p/gtalksms/issues/detail?id=203#c53
