Changing the pdf builder to latex (which also requires installing latex in the gh actions, slowing them down, but 🤷‍♂️).

If the content of the pdf is sufficient, feel free to merge this @soerenthomsen. You can then delete the tag/release and trigger a new one with this pdf, or just release a v1.0.1. Up to you.

Give me a sec to check the new pdf output! i.e. if there are issues with the formulas or so.

Indeed it looks nicer!

But a few issues:

[x] the numbering of the sections starts with 0.X now which would be nicer to have 1.X
[x] it would be great to have the document called on the first page "OceanGliders Oxygen SOP" and not only Oxygen SOP
