We need to setup meds-transforms for multimodal workflows which we plan to support (starting with text notes + time series data)

[ ] Add a pre_meds modification in meds_transform for MIMICIV to include the text notes
[x] Convert this test custom meds-transform script to a meds-transform pipeline
