chore: revert to stable default MUI theme until custom theme is ready #173

There are several known display issues with the WIP custom MUI theme. Until these are fixed and ready for end users, we will stick with the basic default MUI theme which has predictable and familiar behavior for most users across most devices and modes.

Only a minimal change of primary color from blue to green for some consistency with the figma UX. All other colors and styles are default.
