This PR adds separate windows and linux compatible docker-compose versions.
Linux version uses net=host to allow for the use of 'bare-metal' ROS on the host machine. e.g. own controllers, rviz2 etc
Windows version uses default settings (creates a network called fenswoodscenario_default) as net=host is not supported. Ports have been manually exposed so that they are accessible via localhost.
