Identify what is the best list and options for the gender model, and if this is required for certain.

Might be needed for statistics on who is funded.

Could also be a text field which would then be normalised to several options for summary reports

Add basic list for now.

To revisit when we have the option of javascript lists perhaps to allow the user to add their own entry.
