Feature: Backend - API Routing

During this milestone, I will be working on implementing this feature by creating/updating my:

• [ ] API basic structure.
• [ ] Outline the different context for each route. auth, models, etc
• [ ] Document the routes in the README.md
• [ ] Create base routes for each Mongoose Model

Acceptance Criteria

Above checklist is complete and changes have been merged.

• [ ] The routes all work in Postman / cURL
• [ ] All routes are documented in README.md
• [ ] All routes have status codes and return JSON
