Consider checking out https://github.com/Corosauce/Zombie_Players/blob/master/src/main/java/com/corosus/zombie_players/entity/EntityZombiePlayer.java and seeing if it is openly licensed, if so, borrow code with proper credit.

Potentially use particles for this instead of a full on animation
