Update logback and get rid of the Groovy configuration

Summary Since version 1.2.9, Logback does not support Groovy anymore due to security considerations. We need to migrate away from Groovy while keeping the current features.

Describe the feature you'd like The dynamic features to keep are:

• Enabling the console log in CI environments. This can be achieved with conditional configuration

  • The additional dependency can be limited to the test scope since we don't use the conditional configuration for the application
• Getting the log path from the system configuration

Describe alternatives you've considered virtualdogbert/logback-groovy-config took over the groovy configuration but introduced some (justified) security limitations that imply just as much more as getting rid of the Groovy configuration altogether
