Abstract workflow to shared module #25

The processes for the workflows are being duplicated as more workflows are added - create a shared module. e.g. https://carpentries-incubator.github.io/workflows-nextflow/10-Modules/index.html

I have only abstracted the test workflow into cath-shared.nf and this can be built up (or the shared processes moved into seperate modules) as we go.
