Bump research app again, more CI tidying

Overview

We want to make a new release of pywwt that includes the fix for https://github.com/WorldWideTelescope/wwt-webgl-engine/pull/251

While I'm at it, futz with the CI setup a bit more. I'm dropping the Mac suite down to just once build, since they're flaky enough that I think having fewer chances to fail would make a non-trivial improvement on the reliability of the whole system.
