I think "-" and "--" shouldn't be part of the %chardef key. If this cin table supports Romanization output, then "-" and "--" should be in the %chardef value, but they are cumbersome as the key.
"-" and "--" in Tailo and POJ are designed to let readers separate characters within a word. But for an IME, it doesn't seem practical to type all those "-". It seems like something the IME should take care for the users.
When typing a long Taigi "word" , such as "it-kiam-jī-kòo--bong-lâ-á-kiam-sé-khòo" (一兼二顧,摸蜊仔兼洗褲。), one would have to type 10 dashes.
Other Taigi cin tables, such as the YKS_KKS cin file that comes with FHL Taigi IME (only available in Windows), allows users to input "IKJKBLAKSK" (first alphabet of every character) or "itkiamjikoobonglaakiamsekhoo" had they included this proverb. In the older FHL IME version that I have, "bonglaa" and "bla" are acceptable input for "摸蜊仔".
Perhaps the cin could keep the entries with "-" or "--" but add new duplicate entries without it, or even include abbreviation entries as well.
