Fix Swift Package Manager compiling error #56

Sets libwebp version to the latest 1.2.0 and fixes some compile errors for WebPEncoderConfig

I would need to amend GitHub Actions for macOS + SPM testing but given it passes for the pair of ubuntu + SPM. This looks good to me 👍 I'll make another release when I have time but I will be a bit busy for a while due to moving home and holidays.
