Update links from amzn to amazon-ion, and other required updates due to repo change.

Thanks, this PR only modified the documentation but CI/CD failed.

I created an exact same PR to another branch last week and it passed. This might because of the dependency change in Github Actions (as I couldn't repro it locally)

I'll merge the PR first. and I opened an issue here- https://github.com/amazon-ion/ion-hive-serde/issues/104
