Update Media Insights version #374

Description of changes:

Updated Media Insights version to v5.1.0.
Added KMS Key to Auth and Opensearch stacks for compatibility with Media Insights v5.0.0+.
Updated links in README.
Removed AppRegistry association for MI stack. MI v5.1.0 stack already associates to an AppRegistry application.
Updated e2e tests

Do the e2e tests still pass after the upgrade? I don't see any reason why they wouldn't but I just want to make sure.

Looks like the e2e tests will need to be updated as well. They haven't been updated since MI V4.0.1
