if you install windows service you will see a new process in task manager. also if you run a nslookup the name will be resolved through the localhost. So i believe the app itself is just a gui and doesn't need to always run in system tray (just my 2 cents. i'm new here)
$ nslookup wikipedia.org Server: 127.0.0.1 Address: 127.0.0.1#53
Non-authoritative answer: Name: wikipedia.org Address: 91.198.174.192
I prefer to use the best static resolver, like cloudflare.
Does Simple DNSCrypt need to stay open on the system tray? Or is it more for editing, enabling the service and closing the application?
I ask because I noticed that I only seem to connect to the same two resolvers for a while now, even though it's set to automatic.
