Adds proper purging and minification to tailwind #65

This PR adds purging and minification to theme-2021. Changes should be self explanatory and I added a short segment to the README.

Let me know, if anything should be altered. Fixes #64.

It also bumps tailwind and others to the recent versions. Noice! 👌
