This generally doesn't look like it's in good shape. I think we should deal with version updates before we deal with python 3.11.

ESMF 8.3.0 (https://github.com/conda-forge/esmf-feedstock/pull/78) and 8.3.1 (https://github.com/conda-forge/esmf-feedstock/pull/79) are being held up in review of parallelio (https://github.com/conda-forge/staged-recipes/pull/20231).

@xylar cheers for that! Do you know how long this will take (roughly)? One of our packages is held up for 3.11 support by ESMPY. Would it help if I opened a quick PR here with support for 3.11 only for linux64 or will that have to be for all supported platforms? Cheers :beer:
