Desired Outcome

GoReleaser builds Windows, Linux and Darwin-amd64 images but does not build for the new Apple M1 hardware.

See cyberark/summon#217

Implemented Changes

Update .goreleaser.yml to build for M1 chips
This is an update to PR #1449
PR #1453 needs to go in before this, so marking as draft.
