Add latest Claude models

Closes #985

Guess we can decide whether we want to keep Claude-3-Opus (now surpassed by 3.5 Haiku) and Claude-3-Sonnet, but I've left claude-3-haiku in as its 4x cheaper than the new haiku.

@jdbocarsly may have the strongest opionions...
