Improve documentation by updating shi18ny pkgdown page

Document functions
Create vignettes
Update Readme

@jpmarindiaz so far this only contains the documentation for i_ and I've made the necessary changes so that now pkgdown::build_site() picks up on the functions and automatically creates the html page including the list of functions.

Will now go through the other points in the PR description and will comment on here again once it's ready to be reviewed.
