A few minor upgrades to the website

fix fancybox (+ updates to the latest version)
use _config.yml to specify the latest version name / link. This will be less work for you
remove jquery (now unused)

This is excellent work! The new fancybox works nicely, would it be possible to bring the descriptions below the images back?
