[Lens][Embeddable refactor] Write more tests for the new embeddable #198754

Describe the bug:

After the refactor some test have moved over with the new architecture, but others could not be easily translated into the new system. While there are many FTR tests to cover many edge cases, it would be great to keep an high bar for the unit test around one of the most used embeddable within Kibana.
