This would be so much more powerful if you added the ability to set the course start and end dates and times upon creation so that existing activities could then be rolled forward to meet the new start date. I can see that you already reference the start date etc in the code and have a date picker (not sure why that is there without the requested functionality) so maybe you are already working on it but would love to at least now if it is a consideration...
