Compile SI document #59

@beckybanbury, a next step that will be helpful for completing several tasks is to compile the SI into a single document (Appendix.Rmd) so that we know what we have / whether anything is missing (I think this is much clearer in your head than mine), the numbers of each table/figure and can start citing them in the text.

This relates to issues #44, #50.

@beckybanbury, I just added all the figures I think need to go in the SI. Please confirm that I got all of them. Note that I don't think latitude unscaled.png needs to go in, as it really doesn't show anything that's not in Fig. 2.

@teixeirak that looks good - I've just been working on adding the table so will try to work out how to merge these changes with what I've done
