A collection of updates around the project tooling, with no changes to the mappyfile library itself.

use a pyproject.toml file when tools allow it
test examples using pytest
remove legacy files
update dev dependencies

coverage: 91.266%. remained the same when pulling 4176ca83331d749b604f198753f30fb9005d6f15 on dev into 12b1180bda731767cb8472a5d9be4cb4b26bf2b2 on master.
