Rewrite unit tests for zk email recovery module #235

While redesigning the zk email recovery plugin, we decided to skip the unit tests as we had a deadline for zksummit. There will have also been some additional changes to the recovery plugin. These tests need rewriting now that that deadline has passed and the redesign has been completed.
