Update replace-brick documentation #782

The documentation for replace-brick has been out of date for several years. I found myself replacing a brick today and re-visiting a post of mine from 2019 on the gluster-users list discussing this very issue! Now I'm actually sending a pull request to update the documentation.

Note: I'm only addressing the distribute-replicate case here because that's what I use. I have no experience with the other cases. If someone comments I can update other inaccuracies as well.
