update env for RTD #7

I think the outdated env with fixed package versions makes conda fail in RTD. I think it woudl be better to make it less restrictive.

Thanks, that seems to have made the docs pass again. We can think of trying to restrict the versions a bit, but for that it would be good to add an RTD build for a testing branch.
