The problem
Using a Tuya-compatible countdown timer switch, the Tuya integration is only creating an entity for the switch state and not for the remaining time. This makes it impossible to view or change the countdown time remaining. The diagnostic JSON does show that the countdown time remaining is recognized as a device attribute, but no entity is defined to manage it.
