Add release process and clean up packages

Summary

Adds a very basic automated release process with changesets.

• Adds changesets
  • A request has been made to add the changesets bot to this repo; an admin will have an email
  • I believe the first publish must still be made by a human, then we can unlock this
• Converted this to a pnpm workspace (a monorepo) as that's the current structure
• Added ESM default exports
• Added some package.json metadata for npm/JSR
• Fixed the license to be present and recognized by npm/JSR
• Fixed build and added script for it (@types/node missing)

There's some extra effort needed to also add JSR and prerelease publishing if those are desired.

Requirements

• [x] Add CHANGESET_GITHUB_TOKEN secret (inngest-release-bot PAT)
• [x] Add NPM_TOKEN secret (inngest-release-bot npm token)
• [ ] Manually publish and tag first 0.0.1 release
