Change them to be in accordance with the SHU Dev Process

[x] Functional requirements are too vague according to Essam. Nonfunctional requirements are fine.
[x] User Personas are in the wrong format + missing information
[x] User Stories are in the wrong format + missing a lot of information + acceptance tests need to be changed extensively

Need Essam's approval tried me best to fix them, less vague, wording is appropriate to the subject.

Need Essam's approval. Acceptance tests were converted into the correctly formatted "Acceptance Criteria"

Split this up into 3 or 4 issues, and if its done move it 👍
