Set MIDI In channel for Polyphony mode #5

Would be great to have a UI option to select the MIDI channel to react to when in Polyphony mode. I'm trying to use this in a MIDI-Thru set-up and it's currently just listening to every channel's messages.

This will be fixed in v1.10 which I just finished coding :)
