feat!(Cosmos, Dynamo): Cleanup Connect and Establish #421

Adds Connect and Establish helpers to codify common app patterns (one slight breaking change)
removed TableName etc from DynamoStoreContext
changed *StoreCategory ctor fold arguments to avoid C# code having to use FuncConvert
